Easy Guacamole for your Cinco de Mayo celebration

Cinco de May, or the fifth of May, is celebrated all across the United States with the eating of guacamole and drinking of margaritas. According to the History Channel, it is a relatively minor holiday in Mexico — celebrating the Mexican army’s victory over France at the Battle of Puebla in 1862 — it has become a celebration of Mexican culture and heritage in the United States. 

If you are celebrating, in a major way or minor one, here is an easy recipe for guacamole, that was released by Chipotle last year.

Ingredients: 2 ripe Hass avocados, 2 tsp lime juice, 2 tbs chopped cilantro, 1/4 cup finely chopped red onion, 1/2 jalapeno (finely chopped with seeds), and 1/4 tsp kosher salt. 

Cut the avocados in half, then remove the pit. Scoop into a medium bowl, coat with lime juice and toss. Add the salt, use a fork or potato masher to mash until smooth. Mix in the remaining ingredients. Enjoy!
